Shortbread with Candied Citrus Peel

Ingredients

  • 142 grams butter soft
  • 1 tsp van x
  • 60 grams icing sugar
  • 1/2 tsp sel
  • 180 all purpose flour
  • 85 grams candied lemon and orange peel

Cooking Instructions

1. Preheat oven to 350F.

2. Lightly cream butter.

3. Add in powdered sugar, salt and vanilla extract. Mix until just combined.

4. Add in flour. Mix until 90% combined.

5. Add candied citrus peels. Mix until combined.

6. Plastic wrap dough and shape into a log.

7. Chill for minimum 2 hours. Preferably overnight.

8. Slice cookies into 1/2 inch thickness.

9. Spread cookies evenly on baking sheet and bake for 10 minutes.

10. Let cool and enjoy.
